ABSTRACT
This research work was carried out to determine the nutritional composition of cocoyam and water yam which are found in almost all parts of the world like Nigeria, Ghana, Cameron, with water yam originating from South East Asia and the species is widely spread through the world and in Africa, Asia, West Indies, United States and Southern states, also in pacific islands. They are both used in the production of flour, wheat and as a raw material for food products development, as chips, cookies or in baking industries. These species are useful in the health sector for the treatment and prevention of many aliments. Cocoyam is the ideal food for cancer prevention and helps in preventing hardening of the arteries while water yam reduces fever and the leaves are used as poultice, tumors, and skin irritation.
